Giant Oaks Weekly Update Newsletter
Hello Dear Friends,
We are finally beginning to make progress once again. The house restoration and new addition was scheduled to begin last week but due to loads of rain the contractor is trying very hard to play catch-up with jobs which had already begun. Today I was assured that he'd begin next week. I am trying to remain patient. The contractor who will be clearing away the stumps from the vegetable garden areas and regrading and graveling the drive has also encountered the same problems, hopefully next week.
I have already begun tilling the flower beds, planting seeds, and tomarrow I begin the work on the herb gardens. On friday the new tractor, plow, and bush hog will be delivered and we will begin planting about 4 acres in sweet corn including a corn maze. The fruit trees have been pruned, the pear trees are in bloom, and thousands of bulbs are beginning to bloom. I love this time of year watching everything come back to life after the winter rest. Since this is my first spring here, I am pleasantly surprised everyday as I discover the beauty of the existing flowers already here. The pastures have greened back up and it won't be long before everything is in full bloom and leaved out for the year. The new butterfly garden I began last fall is already filled with new growth.
We have been hard at work on the inside tearing out ceilings and exposing the beams, painting, and hauling loads of abandoned junk in the barns and outbuildings. The new temporary chicken house has been built and now houses 100 chicks who are growing by leaps and bounds. Just as soon as they're a little larger the will be running free during the day but still having the safety of their home from predators.
It will be about two more months before we have fresh eggs for sale and I can hardly wait to taste the first ones. If you have never had fresh free range eggs, free of antibiotics, and growth hormones you will be amazed at the flavor and richness of the deeply yellowed yolks.
